A traditional Italian preferment — flour, water and a little yeast, fermented 24–72 hours before it’s hand-stretched into our bases at San Severino, Italy. The long, slow ferment is what gives the dough its light, airy texture and complex flavour, and why it’s easier to digest than a fast, same-day dough.

Long, low-yeast fermentation makes it easier to digest; BIGA pizza have no artificial additives. Toppings still matter most.

How do I store BIGA pizza?

Store your BIGA pizza according to the instructions on the packaging. Our fresh range should be kept refrigerated, while our frozen range should remain frozen until you’re ready to enjoy it.

How do I make supermarket pizza taste better?

It starts with the dough. Our traditional BIGA sourdough is slowly fermented for up to 48 hours, creating exceptional flavour and texture. Simply bake, then finish with fresh basil or a drizzle of extra virgin olive oil.

At home, in a conventional oven, in more or less 7 minutes; if in doubt follow the instruction on the label.
